With comparisons to previous/current synth models.
There are options in the subtitle menu to turn English translations on.

It is a good video, and very nice playing too.

Its probably best expressed as what not to do video imho.

Right off the bat  at 28 seconds he's hosting on his Google drive, "  GR-55 patches", bulk  which he obtained from Gumtowns GR-55 Floorboard app, which are originally created by VGUITARFORUMS users

He has a Strat with GK-3 setup with GK pickup too close to the bridge saddles at 10mm, when Roland/Boss recommends 20mm as ideal. No wonder he experiences a battle with poor tracking
Read " Can GK Pickup be mounted too close to bridge?
https://www.vguitarforums.com/smf/index.php?topic=13322.0

Then he mentions the GM-800 has less features for GK divided pickup configuration as its lacking the "GK Distance"  setting - (the distance of GK pickup from bridge saddles) while that setting does exist on GR-55 (@ 5:28 minutes)

In reality the GR-55  "GK Distance" setting is important for acurate COSM guitar modeling voicing, noticable on the GR-55 COSM Neck pickup model.
Since the GM-800 lacks any DSP Guitar Modeling, it has no need for a GK Distance setting . But 10mm GK pickup to bridge Distance is too close to the bridge for any GK Processor to track accurately, as there will be much higher harmonic overtones , and less fundamental pitch and lower output from a String with less physical excursion at 10mm vs 20mm

At 10:15 minutes his GK-5 on GM-800 Orchestral patch has notes that always sustain. This is probably due to incorrect Low Velocity Cut , or too high GK String sensitivity. Peaking the GK String Sensitivity VU Meters as rarely a good idea, its best to leave some margin because during actual performance most players have more aggressive string excursions mid song. He mentions tried the "Play feel to no avail , never mentioning the GM-800 's Low Velocity  Cut  parameter, and clearly is confused on GM-800 SYSTEM PARAMETERS cs GUITAR TO MIDI parameters, which are separate settings - instead he just blames the GK-5
Review Brock's comment

Review GM-800 Parameter Guide Page 9 SYSTEM PARAMETERS for Global Low Velocity Cut, Play Feel , etc - its separate from Guitar to MIDI

At 29 minutes he demonstrates how he is hosting and redistributing Colin Wilcox's Gumtown GR-55 Floorboard App, on his Google Drive.

Piano thing I did on the Boss gm-800 with my prs. Only used one piano tone for this. I use my luminite wireless midi controller to turn attack and decay on and use that as a "pad" like sound and then turn it off to go back to the normal piano sound. Meris Mercury X reverb pedal also added for ambience.

This is part 4 of my series - it deals with notation into  Dorico, improving your  improvisation with a harmonica sound and getting inspired by self-made ambient sounds:
