Here's a Logic Pro 8 Project Template for MIDI Guitars using Multiple Midi channels. This allows the user to play/record 6 plugins on the 6 individual strings, and support individual string bending on each string.
It is a .zip file.
Save it to User/Library/App support/Logic/Project Template

Other than create 6 instruments in Logic -- one per midi channel, you also have to separate them. How that is done depends on what version of Logic you're running, how the environment is set, etc etc. The first and most important thing is to select "auto demix by channel", because simply creating an instrument and assign a midi channel does NOT make each instrument respond to a single channel.

Controlling multiple instruments on different MIDI channels in Logic is easy, and it does not require you to ever open the environment! It also allows you to record different controller keyboards on different software instrument or external MIDI tracks. Whether you're trying to use an external sequencer (like an MPC 2000, or even another computer running Logic) to trigger instruments within Logic, or whether you're simply trying to play different instruments using different MIDI controllers, read on.

Elantric, the link you posted above is no longer valid. Could you post an update? I believe I had the templet from that zip file at one time but can no longer find it.
