Not strictly a DIY site but the DIY section covers Roland cable pinouts and a GK breakout box project.

www.unfretted.com

The links to the DIY projects are on the left hand side of every page.

DIY Stomp  Pedal Links

Latest strategy is buy Joyo Audio pedals
http://www.joyoaudio.com/en/product/index.html

at Amazon (@$32 ea its cheaper than buying the raw parts separately (Chassis, Switches, Jacks, Pots, knobs, transistors, opamps, etc)

http://www.amazon.com/s/ref=bl_sr_musical-instruments?ie=UTF8&field-brandtextbin=Joyo+Audio&node=11091801

The highly Liquid site has many midi projects examples including custom midi foot controller. With the MIDI CPU i made my foot controller that I'm currently using, highly recommended, look at the forum that has a lot of information.
