New to Midi Guitar

First of all, I know virtually nothing, or at least very little, about midi guitar systems but have dug them since I tried out the GR22, but too expensive.

I purchased FTB in December and I am, I think, finally ready for live use. At times the Hammond patch seems to de-tune badly - always after I have honed it in with the sensitivity, etc., controls. I do not understand the software "boards" enough to tweak sounds there.

To my point, I'm attempting to get a fat, acoustic piano sound like I hear in all the demos. The bundled sound is okay in lower range but lifeless past that. Can I tweak the sound or are there other patches available, ala carte, by other manufacturers?
Some of the packages are great but again, expensive. I am getting back into playing again after 17 years on the the road and 20 years off!

There many software instruments that are free and compatible with the Fishman Tripleplay software.  The Tripleplay software loads VST plugins (the Native Instruments and IK Multimedia software loads into the software in this format).

There are over a thousand free (legit) VST instruments to be found here...

Find the "4Front E-Piano Module" - it may have a preset that is suitable for your needs.

Play around with the search on KVR and get used to dealing with VST plugins.  Here's a helpful article regarding VST plugins in general...
