I'm using  two pairs of single coils to cover 20 strings or two 10 string necks.  I want to wire this toggle switch: http://www.acehardware.com/product/index.jsp?productId=29107996
so I can switch between necks (Neck1, Neck1+Neck2, Neck 2).

The outputs from the volume pots would combine at the output jack.

Parallel would be better for less output when the magnets overlap on the inner strings?

EDIT- I don't think that switch will work because it is on/off/on. That diagram is wrong. I think I need an on/on/on DPDT switch

Correct the above works as PU selector - but you must use a Double Pole on/on/on Switch

Or Just use Gibson style PU switch & wiring
On  Gibson schematic
Neck Pu = neck#1
Bridge PU = Neck#2
